You’ll love this wine.The classic Bannockburn ‘seashell’ characters are evident as well as some interesting lemongrass, ginger, creme brulee, struck matchstick, roasted nuts and mealy influences…all beautifully integrated. The wine has undergone a wild yeast ferment in 1/3 new French oak puncheons with no additions made…. no enzyme, yeast or acid. The following Spring it went through a full malo lactic fermentation. This wine has spent a total of 2 years on gross lees to enhance texture and natural stability.
